Egg muffins are great solution for a grab and go breakfast and it's super easy. You can make them on Sunday and take one or two on your way out the door each day of the week!
Recipe includes 12 eggs and any veggies or meat you want to include. I used what I had in my fridge so I included green onions and mushrooms and some shredded cheddar cheese. You could also chop up ham or turkey if you're more of a meat eater! Stir up the eggs, chop up your mix ins and combine in a large bowl. Pour into the muffin tin, filling each cup about halfway. Bake for about 20 to 25 minutes until the eggs are set in the middle! Remove them from the oven and allow them to cool. Store the muffins in an airtight container for up to five days.
